The vampires and wolves happen to be immortal, but in many ways have more humanity and act as such than the warm blooded humans. Just because you are human does not make you behave in a humanly fashion. These characters are selfish and yet SELFLESS for each other at the same time without thinking about, as Kristine pointed out. Stephanie Meyers 4 books tap into all the layers of these characters in situations that stretch their emotions and their humanity to the limit, and how they behave makes them more HUMAN regardless of being a vampire or wolf. In the end it is about LOVE every kind of LOVE.
